Last week, we had a cookout at work. Each of the ladies was asked to bring either a side item or a dessert and the men were asked to bring either a 2 liter soda or a bag of chips. I made Blueberry cornbread, and thought I would share the recipe for this somewhat unique bread.

You Need:

1 and 1/2 cups all purpose flour

1/2 cup yellow cornmeal

1/3 cup sugar

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1 1/2 cups blueberries

1 cup 2% milk

1 large egg

2 tablespoon extra-light olive oil

1 teaspoon sugar

Heat over to 425. Coat two 4×6 mini loaf pans with nonstick cooking spray. Combine the first 5 ingredients. Sire in blueberries and make a well. In another bowl, combine the next 4 ingredients. Pour mixture into well and stir until mixed. Pour batter into pans until 3/4/ full. Sprinkle remaining teaspoon sugar evenly over loaves. Bake 40 to 45 minutes.

I really love this bread! The blueberries give it some sweetness, but the cornmeal gives it a savorieness without being mealy. Its also simple and quick to make — a great summer recipie!
